A blend that includes the first crop from 2 of our new vineyards: Direct-pressed fruit from Dalardi Vineyard, high above Soquel and saignée from McConnell Vineyard, located at 1000’ elevation on Alpine Road above Pescadero/LaHonda. With additional saignée from Lester Family Vineyard and Saveria vineyard in Corralitos.
She’s lean, pale, fresh and crisp… and unmistakably Pinot Noir. Bright wild strawberry, hibiscus and raspberry aromas up front, with an interesting mineral undertone that adds complexity. Vivid acidity on the palate leaves things with a pleasant zing that works well with a wide variety of food.
Direct-pressed fruit was destemmed first and then allowed to rest at 40º for 2 hours before being pressed to a chilled clarification tank. Saignée performed after varying skin contact, with the juice being chilled to 40º for 2-4 days for clarification. Moved to room temp for native fermentation to begin. Some lots finished on the native yeast, some were inoculated at +/- 20º brix. Racked with heavy lees to the aging tank, and aged 4 months on the lees with stirring performed every month. Racked and sterile filtered for bottling in mid-January.
