Sante Winery Sourdough

During the 2011 grape harvest, our youngest brother John (winemaker for Sante Arcangeli Family Wines) set aside some Chardonnay grapes and fermented them with the vineyard yeast in a bucket.  He turned that fermentation into a sourdough starter.  After 2 years of letting the sourdough cultures build up, he gave it to us.  This is the result:  a true rustic sourdough made from Chardonnay grapes.  A thick crust, dense crumb and sour kick make this a one-of-a-kind old-world sourdough.
